After a relaxing day on the water nothing beats the taste of fresh Island seafood.

Mackerel

Place mackerel fillets skin side down on grill without turning or shake in flour and fry in oil turning once. Cook for 8 to 10 minutes at high temperature. Season to taste. To poach cut whole mackerel in half and cook in water and vinegar at high heat for 15 to 20 minutes. (0.5 - 1.5 kg/1 - 3 lb) Test with fork.

Mussels

Cook mussels in a large pot with 1/2 cup wine, water or beer. (Optional) Add 1 cup of onion and celery combined for a distinct flavour. Cover and steam on high for 10 to 15 minutes. Shells will open when done.

Lobster

In large pot add 1/4 to 1/2 cup salt to 1 to 2 inches water. Bring to a rolling boil. Place live lobsters in steaming water. Cook covered with a tight lid on high heat for 15 to 20 minutes. Lobster are ready when you can twist legs away from body easily. Immerse lobster on their backs in sink or large container of salted ice water for 15 to 20 minutes. Drain and serve with melted butter, vinegar or mayo.

White Fish

Wrap fillets in tinfoil with a dab of butter, lemon juice, or barbecue sauce. Add seasoning to taste. Place on hot grill and cook at high heat for 8 to 10 minutes. Fish will flake when ready.
